The Artichokes are peeled, washed and centrifuged before being roasted over volcanic rock to add a depth of flavor which is impossible to beat. Great as an aperitif or on top of a pizza. The Sott'olios are made by small family-run food producers at harvest time using entirely fresh vegetables and made without the use of chemical additives or preservatives. Most importantly for their flavor and the health of consumers, the vegetables are preserved in extra virgin olive oil.
